SEPTEMBER: Yet Another Kale Salad


1 large bag of Small kale washed and torn or cut
1 can of chick peas, drained
half a cup of raisins, dark or golden
one small to medium red onion, thinly sliced
half a cup of feta cheese, crumbled
a third of a cup  of salted toasted sunflower seeds
( diced red pepper optional )

Vinaigrette: 1/4 cup elderberry balsamic or vinegar of your choice
1/2 cup of olive oil
1 tsp honey
salt and pepper

Assemble the vegetables and other ingredients in a bowl. The quantities are totally variable depending on your tastes.
