JULY: Watermelon And Feta Salad


1 piece of seedless watermelon, about 1&1/3 lbs.
4-5 oz feta cheese
Freshly ground black pepper
2-3 T. roughly chopped fresh mint leaves
2 T good quality olive oil
2 Tsp fresh lime juice.

Cube the watermelon and place in a bowl. Crumble the Feta over the watermelon. Grind fresh pepper over the top. Sprinkle with the chopped mint. Mix the olive oil and lime juice and drizzle over the salad.

Delicious and refreshing.
