SEPTEMBER: Tomato Cucumber Salad

A salad to enjoy in the warmer weather.

Ingredients:

2 large beefsteak tomatoes, large dice
2 pickling cucumbers, halved and sliced
1/2 of a red onion, thinly sliced
1/3 of a cup of black Nicoise olives
1/2 cup of Feta, crumbled
a hand full of fresh mint leaves, chiffonade
2 T. rice wine vinegar
4 T. olive oil
salt and pepper

Mix all together and enjoy.
