May: Roasted Asparagus

Purchase the amount of asparagus that you want. One pound serves 3-4 guests. Break off the hard ends and rinse. Place in a baking dish. Toss with good quality olive oil, a little balsamic vinegar, salt and pepper. (Do not drown in oil or vinegar.) Break up garlic cloves, peel . Leave whole or slice and toss with asparagus. Bake at 350 until wilted and cooked through. Serve warm or at room temp.
